Potted Herrings with Potato, Pickled Cucumber and Egg Salad

Potted Herrings

8 herring fillets

75ml malt vinegar

50ml dry cider

1 onion, peeled and sliced as finely as you can

1 bay leaf

2 cloves

6 all spice berries

Salt and pepper

4 tablespoons breadcrumbs

Set oven to 180oc

Butter a baking dish and season the herring with salt and pepper. Roll up from the tail end and pack into the dish.

Scatter over the onions, placing some in the cavity of the herring.

Pour over the vinegar and cider and add the aromatics. Scatter over the crumbs and bake for 25 minutes.

Potato, pickled cucumber and egg salad

750g baby potatoes

½ cucumber

1 small red onion, peeled and finely sliced

25ml cider vinegar

1 tablespoons castor sugar

Pinch of turmeric

4 chopped scallions

1 tablespoons chopped dill

2 hard-boiled eggs, chopped

100ml sour cream

1 tablespoon wholegrain mustard

2 tablespoons mayonnaise

Boil the potatoes until cooked, drain and cool. When cool slice each into 3. While they're cooking cut the cucumber in half lengthwise then again. Remove the seeds and finely chop. Mix into the red onion. Boil the vinegar, sugar and turmeric together and pour over the cucumber and set aside.

Mix the potatoes with the cucumber mixture, scallions, dill, chopped eggs, sour cream, mayonnaise and mustard.

Check seasoning and serve with the herrings.
