Michelin-starred chef Michel Roux Jr puts his five chosen students through their paces at University College Birmingham, as he decides who will continue under his tutelage.
Three of the UK's most renowned chefs are going back to catering college. Tom Kitchin, Theo Randall and Michel Roux Jr are each looking for a young student to take under their wing, someone they can mentor and inspire, who can eventually become their protege.
Michelin-starred chef Michel Roux Jr continues his search. It is his last day at University College Birmingham - and Michel puts his five chosen students through their paces as he decides who will continue under his tutelage.
Michel's own mentor was his father, the legendary chef Albert Roux, who taught him that a protege not only needs skill but the ability to take on board what the mentor is trying to teach. With this in mind Michel asks the hopeful students to simply cook their favourite dish before suggesting how he would improve them.
Showing that the smallest change can make the difference between good and outstanding food, Michel gives the young chefs food for thought. The young students' dishes are all given a classic French twist - ballotines are tweaked with the addition of snails, chocolate sauces upgraded to cr猫me anglaise and potatoes promoted to chick pea chips - but will they be able to refine their food to Michel's Michelin-starred standards?
The pressure is on, as the determined five must then cook their improved creations for lunchtime customers in a service at the college training restaurant.
At the end of the show Michel must decide who is making enough progress to take through to the next stage, and who must leave.
