Chocolate stout slab cake
125ml stout
125g melted butter
100g soft brown sugar
100g castor sugar
1 egg
75g sour cream
140g plain flour
25g cocoa powder
1 and a half teaspoons baking soda
Grease and line a rectangle brownie tin with parchment paper and set oven to 170oc.
Whisk the stout, butter, sugar, eggs and sour cream together until smooth. Sift the flour, cocoa and baking soda and mix into the stout mixture.
Spoon cake mixture into cake tin and bake for about 35 minutes or until an inserted skewer comes out clean. Allow to cool before icing.
Chocolate buttermilk frosting
150g dark chocolate chopped
100g soft butter
120g icing sugar
75ml buttermilk
Melt the chocolate in a heatproof bowl over simmering water ( or in the microwave). Allow to cool until lukewarm. Add the butter and beat with an electric whisk for 5 minutes. Beat in the icing sugar and then the buttermilk.
Place in a piping bag and pipe onto cake.
