Fonduta with bread and crudités

Fonduta

125ml double cream

125ml wholemilk

1 clove garlic minced

75g butter

200g melting cheese - fontina, cheddar, Parmesan or a mixture

3 egg yolks

Salt and pepper to taste

Simmer the cream, milk and garlic until hot and add the butter and cheese. Stir over a low heat until the cheese is melted.

Check seasoning and cool for 5 minutes.

Whisk in the yolks and serve in a bowl with radishes, tomatoes, cucumber, celery, carrots, bread etc to dunk.
