Food is an important component of everyone's national identity. For immigrants it helps communities to feel at home in new surroundings and can engender communication between other immigrant and native peoples. In the case of the Kashmiri and Pakistani communities in Birmingham, it was their balti dish that bridged the cultural gap. Born in Birmingham, unheard of in India, the balti is a curious mix of entrepreneurialism and the English palate. "I first had a balti at age 16 after finishing work in a pizza restaurant. We drove in to Birmingham at 3am and the place was absolutly packed out. We took our own beer in, took some fantastic home made sweets out, and had a wonderful meal as well. Best bit,Tabletop Naan Breads. WOW!!!"

"OK, lived 13+ yrs in Brum. Spent at least one evening per week enjoying 'balti'! Can still taste it! Wish the indian food out here was 1/2 as good."

"I've been trying to cook decent curry for years and have finally succeeded - it's all down to the balti method. Get some good cooking Masala to add to the pan and then some fresh coriander leaves and garam masala to add in the last 5 minutes of cooking. Wham - Curry !"
