Easy Speedy Dumpling Soup
This is a very easy, cheap and speedy recipe that’s so easily adapted to use whatever greens/veg you have in, and ready in about 5 minutes. This serves one person but can easily be upscaled for more.
Ingredients:
• 1 tablespoon oil, I used sesame but veg oil is fine
• 1 matchboxes sized piece of ginger, peeled and diced finely
• 2 bulbs garlic, peeled and sliced
• 1 large spring onion or two smaller ones, chopped
• 1 tablespoon soy sauce
• About 500ml chicken stock (or vegetable stock)
• 6 filled chicken dumplings, I use Itsu dumplings available in the freezer section of most supermarkets, can be vegetable dumplings also
• Handful of baby spinach leaves (or broccoli/mushrooms/carrot)
• 1/2 a sliced chilli to garnish (optional)
• A few sesame seeds to garnish (optional)
• 1 teaspoon crispy chilli flakes in oil (optional) I use Lao Gan Ma, available online
Method:
• Heat oil in a saucepan, add chopped ginger, garlic and the white part of the spring onions and cook until soft and aromatic.
• Add chicken stock and soy sauce then add your dumplings and spinach and simmer for a couple of minutes until they are cooked through.
• Pour into your serving bowl, garnish with the green bits of the spring onions, your chilli slices and sesame seeds then a bit of crispy chilli flakes.
