Potato Cakes With A Poached Egg
Serves: 3
Ingredients:
300g Mashed Cooked Potatoes
2 cloves of garlic
50g Butter
Half an Onion diced
4 scallions
Nutmeg
100g Cooked Ham
Fresh parsley
3 eggs
Method:
In a saucepan melt the butter and sweat the garlic & onion until soft. Add the scallion, nutmeg, cooked ham and then mashed potato. Combine together and add the chopped parsley.
Cook on low heat for 2-3 minutes then remove and place on chopping board.
Allow to cool then roll into cylinder shape and cut 6 even pieces. Flatten slightly.
Pan fry till golden on both sides using a little butter then transfer to oven to stay warm
Poach 3 eggs to a soft stage and serve soft runny egg with the golden potato cakes.
