Jacques' Summer Fruit Compote With A Twist

A simple summer desert that's best prepared the day before and stored in the fridge.
ÌýÌý
You will need:
Leftover cleaned jamjars (1 per person)
Macaroon biscuits
A selection of berries
Mascarpone
Icing Sugar
Lemon
Ìý ÌýCrush 2 macaroon biscuits per person into the bottom of each jar (this is layer 1)
Ìý
ÌýMix mascarpone and a little icing sugar with a little lemon juice (to taste)

ÌýFor the fruit compote:
In a pan mix a selection of whatever berry fruit are in season in equal quantities (I used black, red and white currant and some blackberries I had frozen but you could use any) and sprinkle with sugar and a little lemon juice to taste.
Bring to a simmer in the pan and then cool.

ÌýThen assemble the mascarpone and compote in layers in the jars and refrigerate.
