Watermelon and mint, a match made in summer salad heaven! Whether you need salad ideas for a BBQ or just fancy a refreshing snack. Juicy watermelon chunks with fresh mint leaves and crumbly paneer, the perfect combination for a hot day!
Serves 4-6
Ingredients
1 watermelon
2 tbsp mint leaves
2 pints full fat milk
2 tbsp white wine vinegar
1 lime
Salt to taste
Dressing
3 tbsp pomace oil
lime zest
lime juice
1/2 tsp organic set honey
Preparation
Cut watermelon into chunks
Roughly chop the mint leaves
Bring the milk to a boil and add the vinegar immediately, you want the paneer to have a crumb like texture
Once the milk has split remove from heat and drain the paneer, allow to cool
Recipe
Mix together the watermelon and mint leaves in a bowl
Mix together the oil, honey, lime zest and juice
Pour the dressing over the salad
Crumble the paneer on top, season with salt and serve
