Ruth Sanderson visits Bruce Farms in Perthshire, where half of the UK's commercial broad bean crop is grown. Farmer Geoff Bruce is on a mission to change attitudes to what he calls "Britain鈥檚 forgotten vegetable". Ruth discovers the intricate planning needed to get peas and beans from the field to the freezer, and learns why this part of Scotland is so well suited to growing them. She also discovers that this much overlooked vegetable could have a part to play in a more sustainable future.
