This dish needs a slightly more robust dry rose. Think pink to match the beetroot! This one’s from the Rhone but you could go with a rosé from Spain (esp. Navarra) or one from Chile, Argentina or South Africa. Just nothing too pale because the flavours of the dish are quite earthy.

Sauvignon Blanc is a great match for most seafood dishes that use lots of herbs and citrus, like this one. We need a properly perky one so go to New Zealand for extra oomph if you can.
