Supper clubs take a deliciously different approach to dining but how would you feel about tucking in to your food alongside a complete stranger? Presenter Frankie Vaughan maybe an expert when it comes to nutrition but she's not so great when it comes to cooking so Chef Steven Devlin is on hand with lessons in how to make polenta perfection with leeks. Chef Neil Forbes launches our new series of food hacks to make life easier in the kitchen plus we'll be finding out how one community is filling a fridge with their surplus ingredients so every one can share in the bounty but how does it work?

Steven Devlin's Crispy Golden Polenta with Baby Leeks

Crisp Golden Polenta with Baby Leeks

250g of Polenta

1250ml of water

1 vegetable stock cube

100g Butter cut into cubes

150g Grana Padana

16 Baby Leeks

Handful of Wild Garlic

100 ml White Wine

70g Butter

4 slices of Minger Cheese or something similar

1 lemon

4 eggs

salt & black pepper

We start by making the polenta

Bring the water to the boil with stock cube & salt.

Pour in the polenta & whisk as pouring in !

Cook for 3/4 minutes on a lower heat, add the butter & cook for another 2 minutes the add the grated cheese, creating a smooth silky finish

Then spread out quickly into a greased brownie tray !

Let cool & then put in fridge to set ( 2 hours at least )

Blanch the leeks in salted boiling water for 2 minutes & refresh in iced water, cut into 1cm pieces.

Cut the polenta into circles using a scone cutter & deep fry at 185 degrees for 5 mins until golden & crispy !

Warm the wine, butter & leeks together in a small pan adding the ripped wild garlic towards the end.

Place the leeks on top of the crisp polenta & add slice of minger.

Finish with a soft poached egg & drizzle of leek & garlic butter !Ìý Enjoy !
