The Queen is head of the political union of 52 countries and it is said that she considers it her greatest achievement. Chef Paul is inspired by a dish served up to the Queen at a grand Commonwealth meeting in Malta - an island where she spent the early years of her marriage. Chef Anna Haugh gets to cook on board the Royal Yacht Britannia, a floating palace and an iconic symbol of the Commonwealth. And Paul uses some of the finest ingredients from his mother's home on the Seychelles to cook up a seafood dish similar to those enjoyed by the Duke and Duchess of Cambridge on their honeymoon.
