Jenny Bristow's Sticky Lemony Chicken with Blue Cheese Mash & Garden Herbs

A great dish to make ahead of time.Ìý Change the flavour of the mash with your choice of cheese from blue cheese to maybe even a milder brie.ÌýÌýÌýÌý

Serves 2-3

Ingredients

2-3 chicken breasts (boneless/corn fed)

1 dsp oil

2 lemons

1 onion – finely sliced

Little thyme – finely chopped

2 dsp honey

2 dsp balsamic vinegar

To Serve

Choice of local seasonal green vegetables

For Blue Cheese Mash

4-6 local floury potatoes

125ml milk (low fat)

25gÌýNorthern Ireland butter

125g cheese grated, crumbled or sliced

1 dsp finely chopped parsley

To Serve

Parsley or coriander

Bunch of herbs from Kitchen Garden

Method

Grate the zest from the lemons and squeeze the juice. Mix together the lemon rind and juice, balsamic vinegar and honey.Ìý Heat the oil in a large pan, add the flattened chicken fillets and cook well or either side until slightly golden.

Add the onion slices, thyme and continue cooking now over a low heat for 3-4 minutes.

Pour over the lemon, honey and balsamic vinegar and allow to simmer slowly.Ìý If needed a little water can be added to prevent the chicken becoming too sticky.

Prepare the Mash

Peel and cut the potatoes into large chunks and cook in boiling water until tender.Ìý Drain and mash.Ìý Stir briefly over a low heat to loose any excess moisture.Ìý Beat in the milk, butter, herbs and finally the cheese either grated, sliced or crumbled.Ìý Remove from the heat and allow the cheese to melt slowly.

Ìý

Serve with a good spoonful of mash on the plate.Ìý Top with the summer chicken and garnish with herbs.
