Pork and Apple Burgers with Celeriac Coleslaw

Celeriac Coleslaw
1ÌýÌýÌýÌýÌý Ìýceleriac, large
½ÌýÌýÌýÌýÌý carrot
Mayonnaise
Chopped herbs
Ìý
Peel and grate the celeriac and carrot. Mix with the chopped herbs and mayonnaise. Store in the fridge until needed.

Pork & Apple Burgers
800gÌýÌý Pork shoulder mince (from your local butcher)
2ÌýÌýÌýÌýÌýÌýÌýÌýÌýÌýCloves garlic, crushed
PinchÌýÌý Salt
PinchÌýÌý Pepper
1ÌýÌýÌýÌýÌýÌýÌýÌýÌý egg
2tbspÌýÌý mayonnaise
2tbspÌýÌý red sauce
1ÌýÌýÌýÌýÌýÌýÌýÌýÌý Armagh Bramley, peeled, cored & diced
1tbspÌýÌý chopped fresh sage leaves

Heat oven to 200C/fan 180C/gas 6.
Ìý
Mix all ingredients together thoroughly and then stir through the apple and sage.
Shape into 4 burgers. Place the burgers on a hot pan with a splash of oil. Turn after 2-3mins depending on their colour (light brown). Leave for another 2-3mins and then place on a baking sheet and cook for 8 minutes or until cooked through.

Place a burger in each roll and top with red onion marmalade.
