Craig Grozier's Pumpkin Cake

160 g vegetable oil

150 plain flour

5 g bicarbonate of soda

150 g caster sugar

105 g whole eggs

Pinch of salt

5g ground hogweed seeds

200g grated pumpkin

50g Walnut

Topping

100g butter

150g icing sugar

200 g cream cheese

1 vanilla pod

Method :-

For the cakeÌý

Heat the oven to 170c

1. Whisk the eggs and sugar till combined

2. Slowly pour in the oil till emulsified.

3. Fold in the flour,salt, hogweed seeds and bicarbonate of soda.

4. Then fold in the pumpkin and the walnuts

5. Pour into a suitable tin and bake for 20 minute till cooked through

1. Beat the sugar and the butter with the vanilla pod seeds till creamed .

2. Add the cream cheese and best till smooth.

3. Wait till the cake cools and pipe on
