Mitch's Onion Bhaji Burgers
Mitch is back with some easy to make onion bhaji burgers for just £1.30 a portion!
Ingredients:
To feed a family of four, you will need:
- 2 white onions, sliced
- 3 spring onions cut into 1cm chunks
- ½ chilli de-seeded
- 4 seeded brioche burger buns
- Handful of coriander
- Natural yoghurt
- Mint Sauce
- 250ml of tap water
- 4 cloves of garlic
- 200g plain flour
- Pinch of salt & black pepper
- 2 tbsp of curry powder
- 200ml vegetable oil
Method:
- Into a mixing bowl, add the plain flour, curry powder, salt and black pepper and give it a mix for about 5 seconds.
- Gradually add the tap water to the bowl whilst mixing continuously with a fork until a smooth batter is formed, this should take around 30 seconds. You're looking for a paint-like consistency, but don't worry if it's not completely smooth, a few lumps won't matter.
- Grab your sliced onions, spring onions, garlic, chilli and coriander and add to the bowl. Then give everything a mix with the same fork until fully coated in the batter for another 30 seconds or so.
- Get a frying pan on a medium-high heat and add the veg oil. Scoop a heaped tablespoon of the mixture and carefully add it into the hot oil, watch out for some minimal spitting and wear long sleeves if you're not used to cooking with much oil. Pan fry the onion bhajis in batches for 3-4 minutes, turning every minute.
- When the bhajis are cooked, place them on a kitchen towel to soak up any excess oil.
- Toast the burger buns on a griddle pan.
- Now it's time to build your burgers - start with your bottom bun, add the mint yoghurt, onion bhajis, add more mint yoghurt, a sprinkle of coriander and some sliced fresh chillies, then dig in!
