Lime and coriander rice

Ingredients
- 200g/7oz basmati rice
- 3 tbsp fresh chopped coriander
- 1 lime, zest and juice
- salt and freshly ground black pepper
- dash of olive oil
Method
Cook the rice according to the packet instructions and then stir in the coriander, lime zest and juice, salt and freshly ground black pepper and olive oil.
Spoon into a bowl and serve.
