I've never grown Dahlias before and the info online is a bit unclear.
So far I have a nice collection of seedlings from a packet of Dwarf Mixed. I understand that any seeds they produce are not necessarily true to type, but will the plant actually produce tubers this year if there are any I want to keep ?

Yes-they will- the trick is to leave them in the ground until the frost has blackened the leaves in the Autumn-then lift and dry off
You CAN leave them in the ground but sometimes they rot way during the winter-if you mulch them again in the Autumn you might get away with it-depends a lot on the soil and weather conditions.
But you will get tubers
